Subject Files, 1923-1988.

The departmental subject files consist of records pertaining to the Department's budgets and expenses (1923-1925), course loads (1924-1925), a small amount of memoranda (1931, n.d.), and seminars offered (1936, 1938, n.d.). In addition, there is material on the beef controversy issue of 1988. In a news broadcast originated by the ISU Extension Service, ISU researcher Suzanne Hendrich cited National Academy of Sciences studies in her claim that eating grilled beef more than twice a month could be a cancer risk. The files contain news releases and newspaper clippings, President Eaton's address to ISU faculty, and a tape and transcription of Hendrich's broadcast.

The food and nutrition curriculum began as a part of the domestic economy courses in 1872. The Department of Household Science was established in 1918.
